Cremini Mushrooms in Sundried Tomato Sauce
2 cups cremini mushrooms
1 tsp garlic, minced
½ cup cashews
1 cup water
½ can sundried tomatoes
2 tbs tomato paste
1 tbs butter
Salt & pepper
Basil or parsley-chopped
Add butter and garlic to a pan and cook on low heat.
Add in mushrooms and cook for 6-8 minutes until mushrooms are soft.
Meanwhile, blend water and cashews on high speed for 1-2 minutes until very smooth.
Add tomato paste and sundried tomatoes to mushrooms.
Stir in cashew mixture and bring to a simmer. Simmer for 3-5 minutes.
Add in salt and pepper to taste.
