White Bean Chili

  • 2 cups Vegetable broth

  • 1 cup cream/milk (or soymilk)

  • 1 can Cannellini beans

  • 1 can Chickpeas

  • 1 can diced green chiles

  • 2 cloves garlic- minced

  • 1 jalapeño- diced

  • ½ yellow onion- diced

  • 1 ½ tbs Salt

  • 1 tbs Cumin

  • 1 tbs Chili powder

  • 1 tsp Paprika

  • 1 tbs oil

1. Add oil to a pan and cook over medium heat.
2. Add in yellow onion, jalapenos, and canned chilies. Stir and cook for 5.
3. Add beans, garlic and spices. Cook for another two minutes.
4. Add spices. Stir.
5. Add broth and milk and bring to a boil.
6. Now reduce to a simmer and let simmer for 20 minutes.
7. Use a potato masher to mash about half of your chili. Or, blend half. Stir.
8. Stir and top with avocado, lime cilantro if you’d like.
**Top with anything else you’d like: shredded cheese, sour cream, , chips.
